Job Description: To establish standardized meat preparation techniques and portioning guidelines, ensuring full compliance with corporate and culinary standards. To consistently inspect the quality, cut, freshness, and presentation of all meat products, ensuring uniformity in portion sizes, appearance, and adherence to food safety regulations. To possess strong knowledge of meat cuts, trimming techniques, and proper handling of all proteins to perform responsibilities efficiently and to the highest standard. To effectively supervise butchery staff, ensuring smooth operation and coordination during each shift. To enforce proper sanitation and hygiene procedures specific to meat handling, ensuring all butchery areas meet or exceed Four Seasons health and safety standards. To have a thorough understanding of Four Seasons Food Standards and apply them to all butchery operations. To ensure that all butchery tools, equipment, and workstations are well-maintained, sanitized, and in optimal working condition through regular inspections. To ensure timely preparation and availability of all required meat cuts and portions for daily service and special events. To perform accurate daily requisitions for meats, dry goods, and supplies needed from the food storeroom, non-food storeroom, and stewarding department. To assist in preparing and presenting high-quality meat-based room amenities or in-room dining selections, contributing to a luxurious guest experience. Preferred Qualifications and Skills: Degree holder in the culinary arts 2-4 years of experience Supervisory or Management experience.
