We are seeking an experienced and innovative R&D Chef specializing in Hong Kong-style Dim Sum to join our dynamic culinary team. The ideal candidate will be responsible for developing, testing, and refining new dim sum recipes while preserving traditional techniques. This role focuses on culinary innovation, balancing authenticity with modern trends and customer preferences. Responsibilities and Duties Innovate and create new dim sum varieties while maintaining the authenticity of Hong Kong-style flavors. Experiment with ingredients, textures, and cooking methods to develop fresh, seasonal, and high-quality dim sum dishes. Modify and improve existing recipes based on consumer feedback and market trends. Conduct thorough testing of new recipes, ensuring consistency, flavor, and presentation. Develop scalable recipes for production while maintaining the highest culinary standards. Work with quality control teams to ensure food safety and standards are met. Stay updated on industry trends, customer preferences, and competitive offerings in the dim sum and broader culinary market. Incorporate innovative concepts into traditional dim sum menus to meet evolving consumer demands. Collaborate with procurement, production, and marketing teams to source the best ingredients, streamline production, and promote new dim sum products. Partner with suppliers to identify and test unique ingredients that enhance the flavor and presentation of dim sum offerings. Ensure recipes are cost-effective without compromising on quality. Manage ingredient inventory and minimize wastage during recipe development. Train junior chefs and culinary staff on new dim sum techniques and recipes. Share knowledge of traditional and modern dim sum preparation with the broader culinary team. Qualifications & Requirements Proven experience as a chef specializing in Hong Kong-style dim sum, with a focus on research and development. In-depth knowledge of traditional and modern dim sum preparation techniques, including steaming, frying, baking, and wrapping. Strong culinary creativity and an ability to innovate within the framework of authentic dim sum. Knowledge of food safety standards and compliance. Ability to work collaboratively in a fast-paced environment. Excellent attention to detail and a passion for maintaining high culinary standards. Experience with scaling recipes for production is a plus. A culinary degree or equivalent professional experience is preferred. Creative problem-solving and innovation.
