Would you like to be part of a dynamic and innovative team? Come join our dedicated Chefs and lead our talented Culinary team in preparing and serving the finest meals made with amazing local ingredients.What you will be doing:Work closely with Sous Chefs to ensure the day to day, on site operations of the kitchen are operating efficientlyTrain, mentor and lead all cooks below Chef de Partie level on daily duties and requirementsAdhere to standardized recipes and specifications in order to maintain consistency and ensure all standards are metMaintain a clean and organized workstation including fridges/freezers, countertops and stove topsEnsure that station opening and closing procedures are carried out to standardKeep overproduction and food waste to a minimum, ensure proper rotation, labeling, and storing of food in order to reduce food cost expenseEnsure that all food products are handled, stored, prepared and served safely in accordance with hotel and government Food Safety guidelinesRespond positively and in a timely manner to all internal and external guest requestsDevelop menu additions with the Executive Sous ChefApply proper ordering procedures in the procurement of productParticipate actively in daily briefings and positively support the direction of the Executive Sous ChefAct as a liaison between the floor and the kitchenHelp raise the standards within the department and bring new concepts forwardQualificationsYour experience and skills include:Red Seal Certificate (Journeyperson's papers) or recognized international equivalent7-8 years' experience preferably in a luxury hotel or large kitchen environmentSafe Food Handling Certification requiredCertificate or Diploma from a recognized Culinary School an assetMust currently be in or previously have held a 1st Cook positionOrganized, efficient and a team playerHigh standards of cleanliness and groomingFlexible with regards to shifts and workstationsCompletion of Level 1 or 2 First Aid course is an assetStrong communication and leadership skillsStrong experience in sauces, entremets, Garde Manger and Banquet productionPhysical Aspects of Position (include but are not limited to):Constant standing and walking throughout shiftFrequent lifting and carrying up to 30 lbsOccasional kneeling, pushing, pulling, liftingOccasional ascending or descending ladders, stairs and rampsAdditional InformationVisa Requirements: Must be legally eligible to work in Canada.
