Ensures that regular, on-goingcommunication occurs in all areas of food and beverage (e.g.,pre-meal briefings, staff meetings, culinaryteam).Works with direct reports to reviewbusiness in house and potential business in surrounding area andtroubleshoot potentialchallenges/conflicts.Ensures that regular,on-going communication occurs in all areas of food and beverage(e.g., pre-meal briefings and staffmeetings).Reviews staffing levels to ensurethat guest service and operational needs aremet.Sets expectations and holds food andbeverage leadership team accountable for demonstrating desiredservice behaviors.Provides feedback toemployees based on observation of servicebehaviors.Utilizes employee feedback and an"open door" policy to identify and addressemployee problems or concerns in a timelymanner.Communicates critical informationgained from pre- and post-convention meetings to areas ofresponsibility.Estimate food, liquor, wine,and other beverage consumption in order to anticipate amounts to bepurchased or requisitioned.Order and purchaseequipment and supplies.
