Waldorf Astoria The Palm, Palm Jumeirah Road Crescent East, Dubai Aa01 The Pastry Junior Sous Chef is responsible for the production and presentation of pastries and other baked goods. Assists the Senior Executive Pastry Chef in the daily activities of the kitchen, including menu development, inventory and purchasing of supplies, and cost control. What will I be doing? The Pastry Junior Sous Chef with Waldorf Astoria Dubai Palm Jumeirah is responsible for creating, planning, and supervising the pastry production of top-quality pastries, desserts, and baked goods in a cost-effective, safe manner to enhance the quality of the guest's experience. Responsible for daily production and supervision of the pastry section. Specifically, you will be responsible for performing the following tasks to the highest standards:- Prepares/produces/bakes breads, rolls, breakfast pastries, and desserts according to standard recipes, in order to contribute to overall guest satisfaction.
- Creates and recommends menu changes to the Senior Executive Pastry Chef.
- Decorates pastries/cakes with creativity and skill.
- Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration of same.
- Monitors and controls the maintenance/sanitation of the pastry shop and equipment to ensure a healthy, safe work environment which meets/exceeds standards and regulations.
- Ensures spoilage/waste are kept to a minimum by ordering and utilizing proper quantities and rotating products.
- Sets daily pars on all products to ensure freshness.
- Supervises pastry section Team Members, trains, empowers, coaches and counsels, resolves problems, and provides open communication.
- Provides a safe and secure environment by adhering to the company Health & Safety and Food Safety policies ensuring all areas are compliant with audit requirements.
- All selected candidates are required to undergo a food trial in our kitchen.
- Skilled in creating, preparing/producing, and decorating pastries and cakes.
- Knife handling, pastry & baked goods knowledge.
- Excellent oral and written communication skills required.
- Five or more years of pastry cooking/baking experience. Supervisory experience.
- High School graduate or equivalent preferred. Advanced degree or specialized training in Pastry is highly desirable.
- Pastry/Bakery certificate or apprenticeship helpful.
- Food hygiene and HACCP certificate.
- Excellent planning and organizing skills.
- Luxury hospitality experience in a similar role.
- Specialized in Pastry/Bakery.
- Ability to work a variety of shifts including weekends, days, afternoons, and evenings.
