Roles and responsibilities

  • Participate in dishwashing, garbage removal, silver polishing, pot washing or any other stewarding area as necessary in accordance with department needs (based on staffing or business levels!)
  • Ensure a safe and productive operation.
  • Assure compliance with Health Department standards.
  • Supervise and maintain the sanitation of kitchen, storerooms, hallways, dock, and equipment.

  • Assist in keeping updated with all items on the communication board and communicate to colleagues when required
  • Assist in maintaining that all colleagues are following the proper grooming standards
  • Ensuring proper pass off to other leaders using logbook
  • Check BEO's - see what set ups are needed to be done on shift
  • At start of shift - do a complete walkthrough of stewarding areas to observe the status of all areas
  • Throughout the shift - continuously walk through all areas
  • Assist in re-assigning colleagues during shift to areas of need.
  • Being responsible for answering Stewarding Phone and assisting all operations with requirements.
  • Assist in controlling stocks for daily use in the department (cleaning products, mop heads, etc.).
  • Assist in controlling breakage, waste
  • Assist in maintaining cleanliness of all kitchens and HOH areas as well as ensuring all maintenance needs are looked after.
  • Ensure all paper towel dispensers are always full throughout the shift.
  • Conduct shift briefing when required.
  • Perform daily checks on staffing level, quality control, maintenance, cleanliness.
  • You will adhere to the Hotel's Hygiene and HACCP standards and ensure its Standard Operating Procedures and Requirements are fully met.
  • Maintain regular attendance at department and operations meetings.
What We Need From You
  • Strong - sometimes you'll need to lift, push and pull big objects up to 50lbs (23 kg). This can involve bending and kneeling.
  • Literate - you'll need a good grasp of reading, writing and basic maths.
  • Flexible - night, weekend and holiday shifts are all part of the job.
  • Compliant - as well as meeting local laws on food handling and serving alcohol, you'll be above the minimum age required and fluent in the local language.

  • Supervising the Team: Managing and overseeing the work of stewarding staff, including dishwashers, kitchen cleaners, and utility workers, ensuring efficient operations in the back of house.
  • Training and Development: Training new staff members and providing ongoing guidance and mentorship to ensure high standards of cleanliness and organization are maintained.
  • Team Motivation: Motivating the stewarding team to perform their duties effectively, fostering a positive and productive work environment.
  • Scheduling and Shift Management: Creating work schedules for the stewarding staff to ensure adequate coverage and that operational needs are met.
2. Organizational Skills
  • Inventory Management: Monitoring and managing the inventory of cleaning supplies, equipment, and other necessary materials, ensuring that stock levels are maintained.
  • Stock Replenishment: Ordering cleaning supplies and ensuring the availability of cleaning materials without overstocking or running out of essential items.
  • Maintaining Equipment: Ensuring that kitchen equipment, utensils, and cleaning tools are well-maintained and in working order.
  • Cleaning Standards: Ensuring the kitchen, storage areas, and dining areas are cleaned and organized according to health and safety standards.
3. Attention to Detail
  • Quality Control: Conducting regular inspections of the kitchen, dining areas, and storage rooms to ensure cleanliness and hygiene standards are consistently met.
  • Health and Safety Standards: Ensuring compliance with health and safety regulations, including proper handling and storage of cleaning chemicals and materials.
  • Cleaning Techniques: Ensuring the staff is following proper cleaning procedures, including sanitizing and disinfecting areas thoroughly.
4. Knowledge of Cleaning Techniques and Chemicals
  • Appropriate Cleaning Methods: Understanding the proper methods for cleaning different types of surfaces, utensils, and equipment.
  • Safe Chemical Handling: Knowledge of safe practices for handling and using cleaning chemicals, ensuring that staff is trained in safe chemical usage and storage.
  • Sanitization Procedures: Overseeing the proper sanitization of dishes, kitchen tools, and equipment, especially in high-risk areas like dishwashing stations.
5. Communication Skills
  • Clear Communication with Team: Providing clear instructions to the stewarding team, ensuring that they understand their responsibilities and tasks for the day.
  • Coordination with Other Departments: Communicating effectively with kitchen staff, management, and other departments to ensure smooth operations and address any issues related to cleanliness or equipment.
  • Reporting: Reporting to management on the performance of the stewarding team, inventory levels, and any issues that need attention, such as broken equipment or shortages.
6. Problem-Solving and Conflict Resolution
  • Handling Complaints: Addressing any issues related to cleanliness or the quality of cleaning services in a professional manner, resolving complaints effectively and promptly.
  • Managing Emergencies: Handling unexpected situations, such as spills or accidents in the kitchen or dining area, and ensuring quick resolution without disrupting service.
  • Troubleshooting Equipment Issues: Identifying and resolving issues with cleaning equipment or kitchen tools, coordinating repairs or replacements when needed.
