Dromoland Castle, one of Ireland's prestigious five-star hotels, is recruiting for an experienced Cellar Bar Person. The successful candidate will be an organised team player with excellent communication skills, and flexibility in response to guest and business needs with an organised and methodical approach to their work. Overview of the Role:
- Flexibility is required as roster schedule is working 40 hours per week / 5 days over 7 to include weekends and public holidays.
- Upkeep of cellar areas in the Castle, Conference Centre, and Bottle yards.
- Assist Bar & Lounge Manager in the ordering of stock.
- Assist Bar Manager and Mixologist on all needs and be on call for emergencies.
- Managing deliveries, transferring stock, and stocking the bars.
- Assisting in the setup of private parties/functions.
- Assist with drinks service in the cocktail bar and conference centre when needed.
- Setup Cocktail Bar in preparation for opening in the morning.
- Start, feed, and maintain Fires x 4 and ensure daily top up of Timber boxes including ordering stock when low.
- Stock Rotation, monitor, and order all bar consumables: Juices, Fire logs, Tea Lights, Straws, Napkins.
- Check function sheets for special requirements and setup bars accordingly.
- Make sure all ice machines are working and arrange repair if faulty.
- Work weekends as per function needs.
- Bar experience is preferable, but not essential.
- Minimum of 1 year previous experience in a similar environment.
- Must be well organised and able to manage busy service periods.
- Have a friendly, chatty, and outgoing personality.
- Working knowledge of Procure Wizard.
- Full clean driver's licence is required.
