Job Summary Ensures efficient running of the Stewarding department, contributing to the overall success of all restaurants and, where necessary, events, in accordance with the hotel's standards. Essential Duties and Responsibilities

  1. Supervise and participate in the cleaning, maintenance, and sanitation of chinaware, glass, silver, kitchen equipment, and kitchen production areas in accordance with production requirements and quality standards while maintaining a safe work environment.
  2. Clean and sanitize chinaware, glassware, and silverware using the dish washing machine; load and unload dishware and flatware from the dish washing machine and store properly.
  3. Clean and sanitize all ovens, steam kettles, mixers, and other kitchen equipment as well as all kitchen drains, sinks, floors, and walls; clean, dust, sweep, mop, polish, scrub, wash, strip, and buff kitchen and pastry shop production areas and hallways.
  4. Clean and sanitize all pots, pans, and kitchen utensils using the correct cleaning and rinsing solutions.
  5. Safely set up, clean, and utilize the silver burnishing machine to clean, polish, sort, and transport silver following a daily or weekly schedule; place damaged or excessively worn pieces in a designated area for repair.
  6. Safely utilize and store all cleaning compounds, chemicals, and materials including soaking solution utilizing the correct protective clothing.
  7. Organize work assignments, make recommendations regarding training, performance evaluations, and discipline for stewards.
  8. Work harmoniously and professionally with co-workers and supervisors.
  9. Clean messes and spills immediately.
  10. Assist with inventory of chinaware, glass, and silver.
  11. Conduct daily briefing for stewarding associates on his shift.
  12. Communicate effectively with superiors, stewarding associates, and other section heads.
  13. Oversee the punctuality and appearance of all stewarding associates under your direction, ensuring they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department's grooming standards.
  14. Assist in the training of the associates ensuring they have the necessary skills to perform their duties with maximum efficiency.
  15. Supervise the associates within the department, ensuring that the correct standards and methods of service are maintained as stated in the Departmental Operations Manual.
  16. Develop the skills and effectiveness of all stewarding associates through appropriate training, coaching, and/or mentoring.
  17. Support, demonstrate, and reinforce Rosewood Hotels & Resorts Values and Culture Characteristics.
  18. Ensure that associates have a complete understanding of and adhere to associate rules and regulations.
  19. Ensure that associates follow all hotel, company, and local rules, policies, and regulations relating to fire and hazard safety, and security.

  2. Take on other tasks in addition to the ones stated, in a reasonable framework.
  3. Be always a brand ambassador and ensure brand integrity and clarity are always maintained.
  4. Model the company's culture, vision, mission, principles, and Culture Characteristics.
  5. Ensure new technology and equipment is embraced, improving productivity whilst taking work out of the system.

It is vital that all such information remains confidential and must not be disclosed to anyone outside the company, guests, and associates, unless otherwise stated. Health & Safety Be aware of and comply with safe working practices as laid down under the Health and Safety Act as applicable to your place of work. This will include your awareness of any specific hazards at your workplace. The wearing of appropriate protective clothing provided by or recommended by the Company will be obligatory. Report any defects in the building, plant, or equipment according to hotel procedure. Ensure that any accidents to associates, guests, or visitors are reported immediately in accordance with correct procedures. Attend Statutory Fire, Health & Safety training and be fully conversant with and abide by all rules concerning Fire, Health & Safety. Be fully conversant with:

  • Food Safety Procedures
