The job 1. Drive the F&B nutrition offering by managing store commercial operations and upholding 6-star food quality and service standards. You are responsible for ensuring that the club’s F&B offering aligns with Virgin Active’s and Nu’s brand promise of wellness, health, and exceptional service. Your goal is to develop a menu that supports the wellness goals of our members while delivering exceptional food quality and service, with commercial and operational responsibility for the overall success of the department. 2. Lead the F&B team and ensure excellent service delivery and operational excellence. You will lead and mentor the F&B crew to ensure that every member experience, from order to delivery, exceeds expectations. This includes upholding our service standards, ensuring team members are well-trained, managing scheduling and operations, and taking action to resolve service gaps. 3. Manage all F&B operational aspects, from inventory control to financial performance. You will manage the ordering, stock levels, portion control, and pricing of food and beverages to ensure cost-effective operations. Additionally, you’ll manage the P&L for the F&B department, drive revenue growth through menu innovations and promotions, and ensure financial targets are consistently met. Key responsibilities 1. Develop and manage the F&B menu and product offering. Curate a wellness-focused menu that reflects Virgin Active’s commitment to holistic health, offering nutritious, delicious, and member-friendly food and beverage options. Regularly review and update the menu to keep it relevant and exciting, considering seasonal trends, dietary needs, and member preferences. 2. Oversee F&B operations to ensure consistent quality, hygiene, and service standards. Ensure all food and beverage offerings meet Virgin Active’s high standards for quality, presentation, and safety. This includes managing compliance with food safety regulations, overseeing cleanliness, and ensuring portioning and stock rotation practices are consistently followed. 3. Lead, train, and develop the F&B team. Hire, onboard, and train staff, ensuring they understand and deliver on the brand’s customer service expectations. Provide coaching and mentoring to develop their skills, encourage team collaboration, and maintain high morale in the F&B space. 4. Ensure accurate inventory management, stock control, and cost management. Regularly monitor stock levels, manage orders and deliveries, ensure products are stored properly, and perform stock audits. Manage food cost variances and operational costs to maximize profitability, while maintaining high-quality service standards. 5. Create and execute sales and marketing initiatives to drive F&B engagement. Collaborate with the marketing and events teams to plan and execute promotional activities and events that align with Virgin Active’s wellness philosophy. These could include wellness-focused dining events, special offers, member events, and seasonal promotions that drive foot traffic and sales. 6. Monitor and evaluate F&B financial performance. Track key financial metrics for the F&B department, including sales performance, margins, and operational expenses. Work to continually optimize profitability, manage food cost fluctuations, and identify opportunities for growth and revenue generation. Key performance indicators 1. Food and beverage revenue: Achieve or exceed sales targets for the F&B department, with a focus on profitability and growth. 2. Member satisfaction and service standards: High satisfaction ratings for food quality, service, and overall dining experience. 3. Operational efficiency and cost control: Achieve target food cost percentage, maintain inventory levels, and minimize wastage while ensuring high operational standards.
