On behalf of our client, who is in the F&B industry, we are seeking a highly skilled and experienced Central Kitchen Manager/ Production Manager with a strong background in Bakery Production. The ideal candidate will be responsible for overseeing the daily operations of the central kitchen, ensuring the efficient and high-quality production of bakery items. The candidate must possess extensive knowledge of Health & Safety, HACCP, ISO, and other relevant standards to maintain a safe and compliant working environment.

Responsibilities:

  1. Manage and oversee the production process of bakery items within the central kitchen.
  2. Ensure efficient utilization of resources, optimizing production output while maintaining quality standards.
  3. Implement and enforce health and safety policies and procedures.
  4. Conduct regular safety inspections and audits to identify and address potential hazards.
  5. Implement and maintain quality control measures to ensure the consistency and excellence of bakery products.
  6. Monitor and analyze production processes to identify areas for improvement.
  7. Stay up-to-date with relevant industry regulations, including HACCP, ISO, and other food safety standards.
  8. Ensure compliance with local, state, and federal regulations governing food production.
  9. Recruit, train, and manage production staff, fostering a positive and collaborative work environment.
  10. Provide leadership and guidance to the team to achieve production targets.
  11. Oversee inventory levels of raw materials and finished goods.
  12. Implement effective inventory control measures to minimize waste and optimize stock levels.

Qualifications:

  1. Proven experience in Bakery Production, with a focus on management roles.
  2. Bachelor's degree in Food Science, Culinary Arts, or a related field preferred.
  3. In-depth knowledge of Health & Safety, HACCP, ISO, and other relevant industry standards.
  4. Strong leadership and team management skills.
  5. Excellent organizational and problem-solving abilities.
  6. Effective communication skills to liaise with cross-functional teams and stakeholders.
  7. Ability to thrive in a fast-paced and dynamic production environment.
