Purpose: The Japanese Sando Bread Specialist will craft authentic, high-quality Japanese milk bread (shokupan) used in our signature fruit sandos. They will uphold Okawa’s commitment to traditional techniques while optimizing production to meet volume demands. Location: This position is based in Riyadh, Saudi Arabia. Key Responsibilities: • Prepare shokupan dough daily using traditional Japanese tangzhong method • Precisely shape and bake shokupan loaves to meet Okawa’s size and texture standards • Monitor ingredient inventory, dough production, proofing, and baking to ensure consistent quality • Slice and package shokupan for use in Okawa’s fruit sando creations • Maintain immaculate hygiene and organization of the bakery area • Train junior bakers on shokupan techniques • Coordinate with procurement on ingredient sourcing • Recommend process improvements to increase efficiency and reduce waste • Ensure compliance with all food safety regulations and Okawa policies Skills Required Skills: • Minimum 5 years experience in high-volume Japanese bakeries • Expert at milk bread making, especially tangzhong method • Deep knowledge of bread science - fermentation, gluten development, etc. • Able to adjust recipes and troubleshoot issues to maintain consistency • Highly organized with strong time management abilities • Effective trainer with excellent communication skills • Fluent in Arabic, English preferred Key Performance Indicators: Production Volume: • Daily shokupan production quota met (target at least 120 loaves/day)• <1% loss due to quality/consistency defects Quality Control: • 100% adherence to shokupan size and texture standards • Crumb color within defined color range • <0.5% customer complaints related to bread quality Process Efficiency: • First pass yield >95%• Overall equipment effectiveness >85%• 100% compliance with FEFO inventory management • Proofing and baking cycle times within target range Safety & Hygiene: • Zero safety incidents • 100% completion of daily sanitation checklists • No critical violations during health inspections The Japanese Sando Bread Specialist will uphold Okawa’s high standards while bringing authentic Japanese bread making expertise to scale our unique offerings.
