The Food & Beverage Manager has the key responsibility of ensuring that all Food & Beverage outlets, Conference and Banqueting operations are managed as successful independent profit centers, ensuring maximum guest satisfaction and consistency in line with Hilton International standards. This role will achieve these through the key strategies of planning, controlling, organizing and marketing. What will I be doing?
  • Lead, mentor, and supervise the food and beverage team, including chefs, bartenders, and other relevant personnel. This includes training and development programs to enhance team performance and uphold the hotel’s service standards.
  • Conduct regular performance appraisals and provide feedback to improve individual and team effectiveness.
  • Ensure a superior guest experience by delivering exceptional food and beverage quality and service. Resolve guest complaints and feedback promptly, maintaining a professional and courteous approach. Anticipate guest needs and personalize their dining experiences.
  • Oversee daily operations of all food and beverage outlets, ensuring efficient workflows and timely service. This includes monitoring inventory levels and ordering supplies to maintain smooth operations.
  • Maintain high standards of cleanliness, organization, and presentation within the food and beverage areas.
  • Ensure compliance with health, safety, and sanitation regulations in all areas of food preparation and service.
  • Develop and implement strategies to achieve revenue goals, control costs, and maximize profitability. This includes preparing and managing departmental budgets, including tracking expenses and managing labor costs.
  • Monitor and analyze financial performance and provide actionable insights to senior management.
  • Collaborate with chefs to create innovative, seasonal, and culturally relevant menus for all dining outlets. Review and update menus regularly to stay current with food trends and guest expectations.
  • Work with the marketing team to create and implement food and beverage promotions and special events. Ensure the hotel's F&B offerings are aligned with brand identity and market positioning.
  • Develop and maintain strong relationships with vendors and suppliers including negotiating contracts and pricing with suppliers to ensure quality products at competitive rates.
  • Ensure compliance with all local, state, and federal regulations regarding food safety, alcohol service, and labor laws.
  • Prepare regular reports on operational performance, guest feedback, and financial outcomes for senior management.
What are we looking for?
  • Bachelor's degree in Hospitality Management, Culinary Arts, Business Administration, or a related field.
  • Proven experience (5+ years) in a food and beverage management role, preferably in a full-service international hotel.
  • Strong leadership and team-building skills.
  • Excellent communication, interpersonal skills, and experience in delivering extraordinary guest experiences.
  • Knowledge of food safety standards, sanitation regulations, and labor laws.
  • Ability to work in a fast-paced, high-pressure environment while maintaining attention to detail.
  • Fluent in English and Bahasa Malaysia.
  • Strong financial acumen and experience managing budgets.
