Head Chef - Exciting New Japanese & Mexican Fusion Restaurant!

Location: Soya Restaurant, Bahrain Type of Contract: Permanent (2-year contract with potential for renewal) Start Date: July 2024 Salary: Negotiable depending on Qualifications and Years of experience About Soya Restaurant: Soya is a vibrant new local brand debuting in Bahrain with plans to expand throughout the Middle East. The restaurant spans three floors with outdoor seating, accommodating up to 80 guests. Soya offers a dynamic blend of Japanese and Mexican cuisines, delivering an innovative fusion experience with a menu that includes Robata grills, sushi, tempura, and Mexican-inspired tapas. The restaurant aims to provide a unique dining experience on each floor, featuring live music and a fun, modern atmosphere. Responsibilities:
  • Menu Development: Create and regularly update the menu by drawing inspiration from notable establishments like Clay, Zuma, Canary Club Dubai, Soul Street Dubai, and Los Mochis London, as well as personal culinary innovation.
  • Culinary Excellence: Ensure the highest quality of food preparation and presentation. Oversee the kitchen's culinary operations, including the creation of unique sauces and dishes that blend Japanese and Mexican elements.
  • Operational Management: Manage all kitchen operations, including staff training in both hot and cold kitchen processes, recipe standardization, inventory control, and cost management. Maintain food costs within the 20-25% target range.
  • Leadership and Team Management: Lead by example as a team player and a hands-on leader. Recruit, train, and motivate a culturally diverse kitchen team of 8-10 members, ensuring high performance and adherence to health and safety regulations.
  • Financial Oversight: Efficiently manage food and labor costs, contributing to the profitability of the restaurant.

Requirements

  • Culinary degree from a recognized culinary school or institute.
  • 4-6 years of experience as a Head Chef in an upscale restaurant, with proven expertise in Japanese and Mexican cuisines, including specific skills in Robata and sushi.
  • Demonstrated ability in menu development and execution with a creative culinary approach.
  • Strong operational management skills, with experience in training staff, inventory management, and cost control.
  • Excellent communication and leadership skills, capable of fostering a cooperative team environment.
  • Flexibility to relocate to Bahrain and willingness to travel as needed.
