About the role opportunity: We are now hiring for an exciting opportunity of Culinary Development Lead (Medirest) in a full-time permanent role based at our national support office in Parnell, Auckland. The primary purpose of this role is to lead culinary development for the Healthcare Sector. To understand the contract, deliver on the culinary goals and develop strategic direction, elevate customer experience through well-designed innovative menus while conforming to the financial framework. This role will develop content on Retail Café Menus, Culinary innovation, menus, Culinary SOPs within the Compass Group Healthcare Sector by making optimum use of existing framework of data available. The role will also support the site-based Head Chefs in their culinary requirements as need arises. The role will report into & support the Project Manager in delivery of Culinary Business Excellence management to a high standard across the sites by influencing the culinary team in the right direction, industry best practices etc. The role will also be a part of the larger Culinary Council in NZ. Responsibilities:
  • Providing operational support to the Project Manager (Medirest) in leading Culinary Development for the Healthcare Sector including development of cyclic menus, Recipe Cards, Allergen management, SOP's, product specifications & guidelines and training information for all sites. This includes Retail Menus across our MAP 2 cafes and function catering menus.
  • Ensuring market competitiveness, by staying up to date with culinary market trends and competitor movements.
  • Menu and product development by identifying opportunities to improve the culinary products and services to maximize quality and profitability. Lead menu development as per annual Culinary Calendar ensuring adequate amount of planning is done to maximize quality and profitability.
  • Training and Development by ensuring that Head Chefs develop new culinary menus and logistics requirements to aid maximum productivity with minimum labour, food costs and quality being maintained.
Ideal skills and experience you will have:
  • A minimum of five years in an Executive Chef/senior culinary position
  • Demonstrated ability to establish and maintain productive relationships with internal and external customers
  • Proven ability to anticipate customer needs and achieve or exceed customer satisfaction standards
  • Demonstrated ability to plan, implement and manage strategic objectives
  • Financial acumen that demonstrates a thorough understanding of operating a kitchen with budgetary restraints
  • Proven menu development and culinary innovation experience
  • Proven ability to drive revenues through the successful development of innovative products
  • Moderate level of computer literacy with Office 365 and e procurement system
  • Workplace Assessor and trainer qualified (Unit Standard 4098 or equivalent) would be desirable as well as international culinary experience and working with a range of cuisines
