Summary Cutsmeatsforpreparationoffoodrequiredforrecipesin accordancewithestablishedstandards. Essential Responsibilities and Duties 1.Checksproductionsheetforthequantityofworktobeaccomplished. 2.Obtainsallprimarycutsofmeatsrequiredbymenuforcutting. 3.CutsmeatsintoproperportionstobeinspectedanddeterminedbytheChefandAssistantChef. 4.CutsmeatforspecialfunctionsandVIPservice. 5.Cutsmeat,fishandpoultrytobemarinatedfornextdaymenu. 6.Observesallestablishedsafetyproceduresinoperatingequipment. 7.Observeshighstandardsofhygienethroughoutthecompleteoperationinhandlingoftheequipmentandworkarea. 8.Followsallhospitalrelatedpoliciesandprocedures. 9.Performsotherrelateddutiesas assigned. 10. Participates in self and others education, training, and development, as applicable. Education HighSchool Educationandcompletionofapprenticeshipinbutchering/meatcutting is required. Experience Required Three(3)yearsofmeatcuttingexperienceinabutchershop, hotel,restaurantor institutionalfoodserviceoperationrequired. Other Requirements(Certificates) N/A
