Living the island life, the successful candidate will utilise their skills acquired from working in a leadership Food & Beverage role to manage the team efficiently, guarantee high quality personalised guest service and ensure the smooth running of the restaurant at all times. Your RoleJob Responsibilities may include, but are not limited to, the following: Acting on behalf of the Restaurant Manager in their absenceCoordinating service and production with the kitchen, stewarding and bars to achieve a consistently high standard of service and product thus ensuring guest satisfactionEvaluating staff performance to establish training and development needs, conducting and recording regular training sessions according to these needsAssisting the Restaurant Manager in achieving budget forecast results through monitoring product, labour costs and wastage within the departmentAssisting with the preparation of staff rosters at least 7 days in advance according to forecasted occupancy and events to ensure prompt service whilst controlling wage costsDirectly responsible for the alarms and security systems for closure including the training of SupervisorsEnsuring EFT transactions, float balance and shift reconciliation is performed according to HIE policy and procedures, ensuring all discrepancies are reported to the Restaurant Manager with a detailed explanationParticipating in all training programs as requested by departmental managersPlanning menus in collaboration with the Executive Chef when requestedAssisting with the development of marketing and promotional plans to achieve extra revenueEnsuring dining facilities and all other guest and staff facilities (including bathrooms, storage rooms, etc) comply with health regulations and are clean, functional and of suitable appearance at all timesAppraising, encouraging, coaching and supporting staff utilising a performance review system, ensuring frontline performance reviews are conducted for probationary and annual reviews, correct performance issues and support as requiredAssisting in the recruitment of staff in conjunction with the Restaurant Manager and Recruitment departmentAssisting with the planning and organisation of special events and functionsProcessing stock requisitions in accordance with par stock levels and conducting regular stocktake for the venueHolding daily briefings to ensure all staff are aware of special requirements in the restaurant such as functions, service standards, food and beverage specials and dietary requirements About YouYou are a high performing hospitality professional who demonstrates attention to detail and has a focus on excellence in service delivery and guest experience. Your exemplary communication, interpersonal and leadership skills will motivate your team and resolve any concerns or issues with staff or guests. You work well under pressure, are reliable and flexible to work a variety of different shifts.You will have: Minimum five years' Food and Beverage experience working in restaurants and bars - including in capacity as Assistant ManagerStrong beverage, wine and cocktail knowledge and several years' experience training staff in these skillsNatural leadership skills with a focus on training, skill-development and mentoringExcellent organisational and interpersonal skillsCurrent QLD or Nationally Recognised 'Responsible Service of Alcohol' (Essential)Drivers Licence (Essential)Impeccable grooming and personal presentationDemonstrated thorough knowledge and skill set according to the style of the specified outletRMLV may be required for some outlets
