*About Clio*Clio is a new private members’ club located in the heart of Toronto’s King West neighbourhood. Situated in a newly reconstructed 4-storey heritage building, the club comprises of lounges, a restaurant, a vibrant bar, cinema, roof terrace and various flexible meeting and private dining rooms.*Job Summary:*Clio is looking for Pastry Cooks to join the team that possess 1 – 2 years of culinary experience with excellent pastry skills. The successful candidate should also possess strong knowledge of pastry set-up/breakdown of station along with a great “positive can-do attitude.” Pastry Cooks will go out of their way to take care of our guest’s special requests. Employees will receive training and development opportunities, dining discounts and enrolment into INK’s Perkopolis discount program.*Duties/Responsibilities:** Use the understanding of ingredients and food preparation to craft recipes and create pastry goods. Measure and mix raw ingredients, bake and decorate items, and ensure that all raw and finished goods adhere to quality and food safety standards.* Restaurant pastry service/banqueting* Accurate scaling of ingredients and execution of recipes* Adjust oven temperatures to ensure proper baking* Mix various ingredients to create fillings for cakes and pies (e.g. chocolate ganache, caramel sauce and fruits)* Shape dough to prepare different types of pastries, including croissants, cookies and sweet rolls.* Ensure food safety by dating and rotating food containers, safely storing perishables, and maintaining a sanitary work environment.* Check pars for shift use, ensuring that correct amounts are pulled for prep and noting items that need replenishment.* Ensure proper receiving, storage (including temperature setting) and rotation of food products to comply with health department regulations.* Ensure quality food is prepared and displayed in order to achieve customer satisfaction and profitability while maintaining a high standard of cleanliness and sanitation in designated work areas.* Assist with the preparation and display of high-quality foods as established by the Pastry Chef.* Ensure food is handled, processed, and stored in accordance with Food Handling.* Report any questionable product concerns to supervisor to maximize product utilization and minimize waste.* Maintain expected timeliness of orders from the kitchen to the dining room.* Ensure that all given tasks are completed daily before you leave for the day and that you communicate your departure with the Pastry Chef/Pastry Sous Chef on Duty.* Assure that all daily cleaning and organizational standards are met consistently throughout the day in both storage and production areas.* Consistently maintain fellowship and professional etiquette with your peers at all times.
