About the job: Sous Chef (Hot & Cold Kitchen) Job Purpose: The Sous Chef is the second-in-command in the kitchen and plays a critical leadership role in ensuring smooth daily operations. Supporting the Head Chef, the Sous Chef oversees kitchen staff, ensures food quality and consistency, and upholds hygiene and safety standards. This role requires strong leadership, technical skill, and the ability to thrive under pressure in a fast-paced environment. Responsibilities: Supervise the entire kitchen operation in the absence of the Head Chef. Oversee the preparation and presentation of all food, ensuring high-quality standards are met consistently. Lead, coach, and develop the kitchen brigade, including Chef de Partie, Demi Chef, Commis, and stewards. Ensure proper food storage, labeling, rotation, and waste control. Maintain a clean and organized kitchen in compliance with all hygiene and food safety regulations. Monitor portion control, reduce waste, and ensure cost-effective kitchen operations. Collaborate on menu planning, seasonal specials, and new product development. Coordinate daily prep lists and ensure all kitchen stations are ready for service. Conduct regular training and performance evaluations to build a skilled and motivated team. Report equipment maintenance needs and manage kitchen inventory alongside the Head Chef. Maintain a calm, professional demeanor, especially during high-volume service. Experience: Minimum 5 years' experience in hotels or upscale restaurants in the UAE.
