Description

The Senior Sous Chef is responsible for continental food including Mexican and/or Italians and to cook quality food in accordance with company standards. He is responsible for supervising staff and ensuring high levels of food preparation in order to deliver high-quality food. The Senior Sous Chef is also responsible to assist with food cost controls.Key Areas of Responsibilities: Preparation, cooking, and presenting Continental dishes.Developing new recipes for Kcal Meal Plans.Insure presentation and styling of all dishes to the highest standard.Brainstorming ideas for new products or existing product modifications/add-ons Assist with stock ordering and monitoring procedures.Maintain high standards of food hygiene and health & safety at all times.Participate fully in all meetings, training, and forums.Demonstrate excellent food preparation practices, portion control and end to end food production.Support the Head Chef to deliver on all company measures & targets.Follow all company operational kitchen process and procedures, achieving all required standards.Take responsibility for delivering the highest measures of food production and presentation to customers including manning the live cooking stations if required.Monitor food consumption to ensure 100% customer satisfaction and minimum waste.Support the Head Chef in the introduction of new seasonal dishes.Cascade your knowledge and expert cooking to all kitchen staff.Suggested innovation and commercially viable ideas to improve food quality.Monitoring portion and waste control to maintain profit margins.Perform any reasonable duties as required from time to time in order to contribute to the achievement of business aims and objectives.Follow all safety and sanitation policies when handling food and beverage.Other duties as assigned by the Head Chef.Professional Requirements: ·Minimum of a Diploma/ Certificate or equivalent·Minimum 5 years of experience in similar capacity out of which 3 years within the U.A.E·Excellent knowledge in relevant food and Health & Safety regulations·Ability to act on own initiative and handle stress well·Expertise in continental cooking·Possess/develop a food & customer focused approach to work·High standards of personal hygiene·Detailed and precise working·High level of enthusiasm and drive to achieve high standards·Hard working, flexible and prepared for change·Ambitious and driven by over exceeding customer expectations Interpersonal Requirements: ·Ability to manage and prioritize·Ability to meet deadlines·Adaptable to various competing demands WHAT WE BRING TO THE TABLEA fun friendly place to work and a great company culture to match.
