Kitchen Operations Specialist
Description
Work as an assistant to the sous chef or chef de cuisine, establishing and maintaining high standards. Ensure the smooth operation of the kitchen department by optimizing resources and staff to maximize revenue and guest satisfaction.Coordinate and implement training programs for kitchen colleagues, prepare food daily according to business requirements, and assist the chef de cuisine/sous chef in supervising colleagues working in the kitchen.Collaborate with the chef de cuisine or sous chef to develop culinary standards specific to banquets that meet target market needs, create menus and recipes, and test samples with the executive chef/executive sous chef and/or chef de cuisine.Write product specifications and recipe standards for use in our systems and by the procurement team, utilize locally and seasonally available products in menus and specials, inspect fresh food received daily, and ensure quality is maintained.Inspect food stores and refrigerated areas twice daily, recommend correct storage methods to comply with health & safety regulations, and check food preparation individual costs, quality, quantity, and portion control on a daily basis.
