About the Role SUSHISAMBA Dubai is a vibrant fusion of Japanese, Brazilian, and Peruvian cultures — a culinary journey like no other. Known for our bold flavors, energetic atmosphere, and unforgettable dining experiences, we're looking for an Executive Sous Chef to work closely with the Executive Chef to oversee daily kitchen operations, lead a team of passionate chefs, and ensure each dish is executed to perfection. This role requires a leader with refined culinary expertise, strong organizational skills, and a deep love for innovative fusion cuisine. Responsibilities Support the Executive Chef in all aspects of kitchen operations Lead, train, and motivate the kitchen brigade to deliver exceptional quality and consistency Ensure food preparation meets SUSHISAMBA ’s high standards of presentation, flavor, and freshness Oversee daily prep, service, and kitchen flow for smooth execution during high-volume periods Collaborate on menu development, seasonal specials, and new dish creation Monitor and enforce food safety, sanitation, and hygiene standards at all times Manage inventory, minimize waste, and control food costs effectively Foster a positive, team-oriented environment in the kitchen Qualifications Minimum 5 years of experience in a leadership role in a high-end, high-volume kitchen Expertise in Japanese cuisine is a must; familiarity with Peruvian and Brazilian influences is a plus Strong leadership, coaching, and communication skills Ability to thrive under pressure in a fast-paced, detail-driven environment Creative flair and a deep understanding of contemporary culinary trends Solid understanding of HACCP, food safety regulations, and cost control Fluency in English required; additional language skills are a bonus Previous experience in Dubai or within an international restaurant group is highly desirable Required Skills Expertise in Japanese cuisine, strong leadership, coaching, and communication skills, ability to thrive under pressure, creative flair, understanding of culinary trends, knowledge of HACCP and food safety regulations. Preferred Skills Familiarity with Peruvian and Brazilian influences, additional language skills, previous experience in Dubai or within an international restaurant group.
