Organizes together with the teamshifting in the section with regard to mise-en-place production andits serviceGuide the team Pastry team duringthe daily operationsMaintains good colleaguesrelations and motivate colleaguesEnsures thattraining on a one-to-one basis has been carried out andcomprehendedWorks to the specificationsreceived by the Executive Chef regarding portion size, quantity andquality as laid down in the recipe indexCheckall set-ups for Pastry & BakeryCheckstores and refrigerators and oversee proper storage and recyclingof leftoversEnsure effective communicationamong the section and with otherdepartmentsWork closely with receiving andstoreroom to ensure received goods meet Hotel's qualitystandards specificationsIs responsible forcompleting the daily checklist regarding mise-en-place and foodstorageAttends daily meeting with the Chefsand other meetings as requested by the ExecutiveChefEnsures All the hygiene records aremaintained and adhere to all the hygiene trainings and pre setSOPPasses all information to the next shiftabout functionsMaintain proper controls overpurchase orders and requisitionsMonitormonthly food inventory turnover and slow movingitemsEnsure purchasing, receiving and allstorage are efficiently handledChecks onCommis Chefs on his/her section: e.g personal hygiene.QualificationsStrong experience in Pastry &Bakery, ideally in a 5* hotelPhysically fitand able to stand for long hoursExcellentleadership & supervisory skills with a"hands-on" approachAtleast one year in an international five star hotel/ restaurant insimilar positionSound knowledge about allkinds of cooking techniques andmethods INT
