Main Objectives Directs the activities of the Food Cost Unit. The main function is to control the operation of the Catering software system. Maintains all pricing and schedule details of all airline operations. Includes carrying out various analytical activities with regard to food costing to ensure accurate pricing of all catering items provided to customer airlines. Carries out regular food consumption forecast analysis and liaises with all concerned departments regarding any operational changes. Reconciles and prepares menu quotations for each customer airline. Analyses and prepares tender comparison charts. Is responsible for ensuring that the desired level of profitability is ensured through maintenance of the pricing methodology. Attends food presentations to record all changes to specifications and assists in negotiations. Main Duties o Directs the activities of the Food Cost Unit within the Catering department so as to ensure accuracy of pricing and analysis. Includes carrying out various analytical duties relating to food costing to ensure accurate preparation of catering check lists for all flights, including VVIP and charter flights. o Maintains the integrity of data within the Catering Software system. o Analyses and prepares the actual selling prices of all catering items for customer airlines. Includes feeding the necessary related information into the computer system after confirmation of price acceptance from the airlines. Ensures that all menu cycle changes are accurately recorded to match the airline schedules. o Plans and prepares in advance the food cost consumption forecast after accurate analysis of all flights catering schedules and menus. Includes notifying all Sections concerned within the department of any related changes. Ensures that yield test reports are received on time from the Production section for accurate preparation of costing. o Prepares detailed check sheets for all customer airlines, reflecting item descriptions, equipment requirements, quantity, portion sizes, and relevant prices. Includes proposing alternative suggestions to customer airlines at menu presentations, taking into consideration the profit margins already established with the airline. o Prepares accurate priced check sheets for any Cash Operator Flight for immediate cash payment on delivery of items. o Comply with the Company and Airport authorities’ health, safety, and security regulations. Minimum Requirements Education: o Completion of Secondary (12 years) education followed by 3 years. o A recognized diploma in accounting/costing studies. Experience: 5 years’ experience in a similar position with sound accounting and computer background. Other Essential Requirements: Excellent knowledge of spoken and written English.
