Job Title: Sous Chef

Job Description

All duties normally expected of a sous chef position, such as (but not limited to): 

Manage an outstanding kitchen operation to ensure that the workplace is a controlled, professional, efficient and profitable.

Ensure all execution of kitchen products are as per brand guidelines and operational procedures

Help with creating new recipes and write menus.

Innovate with new promotional products and insightful kitchen service techniques.

Possess an innate understanding and ability to develop on trend 'food styling' to add value to the business, brand integrity and repeat customer experience.

Ensure a high level of personal grooming and a positive attitude at all times.

Attending meetings when requested.

Ensure all business performance targets are achieved.

Demonstrate awareness of competitor activity and local market forces

Ensure all opportunities for business improvement are identified and relayed to the head chef and operations manager

Adherence to The Company Policy and Local Health and Safety Regulations at all times

Kitchen Duties

Implement recipes provided by your head chef as well as developing new concepts and recipes together

Consistent portion control to meet product and cost guideline

Ongoing staff training to ensure the kitchen is a learning organization

Manage all back of house kitchen staff on duty including quality assurance, performance and product knowledge

Maintain effective communication with your head chef, to ensure deliveries are as per the weekly schedule, on time and in the right quantities

Check all in-coming orders and alert management of any product or price changes

Maintain a tight control of stock room management

Fortnightly stock count and monthly stock report

Control staff meal allocation

Maintain strict hygiene standards for all staff and enforce uniform regulation

Adhere to thorough cleaning schedule

Document all wastage and breakages

Ensure all products are date labelled and FIFO is enforced
