Job Title: Restaurant Manager

The primary role of a restaurant manager is to oversee and control the day-to-day operations of a restaurant.

Key Responsibilities:

  1. Familiarize front-of-house (FOH) and back-of-house (BOH) staff with daily requirements.
  2. Ensure all staff receives necessary training prior to opening and as needed to maintain operational standards.
  3. Coordinate with related parties during the pre-opening phase to ensure readiness for the opening date, including staffing, training, stocking, menus, budgets, marketing plans, and other operations.
  4. Treat all staff fairly and with courtesy.
  5. Maintain up-to-date time tables, leave rosters, and attendance registers.
  6. Collaborate with the executive chef and bartender on new menu items and create diverse beverage lists.
  7. Ensure smooth communication between the restaurant and kitchen.
  8. Verify receipt and storage of purchased orders.
  9. Manage the restaurant's profit and loss statement.
  10. Achieve revenue and sales targets for the entire operation on both floors.
  11. Ensure prompt, efficient, and courteous service in the restaurant.
  12. Schedule working hours for service staff based on expected business volume and maintain attendance registers.
  13. Inform staff about disciplinary procedures, grievance handling, and other relevant matters.
  14. Order supplies and manage inventory levels, quality, and prices.
  15. Administer daily tasks and send documents to the accounts department promptly.
  16. Maintain expenses within budget limits.
  17. Manage the tips division and monthly inventory.
  18. Oversee the day-to-day functions of restaurant employees, facilities, stock checks, and sales.
  19. Maintain secure storage of all commodities.
  20. Conduct daily briefings to ensure smooth service sequences.
  21. Hold weekly meetings with the managing partner to discuss operational performance and special arrangements.
  22. Lead PR and marketing activities to maximize exposure, footfall, and sales revenues.
  23. Generate reports on restaurant operations, including budgets, cost breakdowns, and sales breakdowns.
  24. Maintain operational hygiene standards according to cleaning rotas.
  25. Be aware of health, hygiene, and fire safety policies and procedures.
  26. Familiarize yourself with emergency exits and evacuation procedures.
  27. Monitor and control departmental operations to achieve the budget.
  28. Analyze departmental costs and implement corrective measures to produce positive business results.

General:
