PRIMARY OBJECTIVE OF POSITION

To ensure that all staff practice good hygiene practices (GHP) throughout the production in Central Production Kitchen and all other outlets.

TASKS, DUTIES & RESPONSIBILITIES

Assist the Hygiene & HACCP Manager with the day-to-day requirements of the Radisson Blu Hotel, Doha.

Responsible for maintaining the highest level of Food Hygiene and Safety standards in the hotel.

Work mostly in the production areas, monitoring that food safety procedures are being followed.

Ensure proper documentation and records are completed by the responsible parties.

Problem-solving related to food and safety issues.

Help maintain the ISO 22000:2005 certification in the F&B Department such as food production area and all areas involved in the Food chain.

Assist with enforcing food safety program and procedures, GMP policy, and personal hygiene policies.

Perform and record Food Safety inspection and report any irregularities and take proper corrective action.

Responsible for quality and safety checks for all raw and prepared food products.

Verify and communicate any findings related to food safety and/or quality issues to appropriate departments.

Report and assist with correcting any unsanitary conditions in food preparation and food storage/receiving areas.

Report any required maintenance/replacement of food preparation equipment, surfaces, and tools.

Assist in maintaining and updating all records, manuals, training procedures, and product specification books.

Assist with preparation for any and all food safety audits.

Maintain cleanliness and sanitation of all food premises.

Conduct supplier audits, fill the supplier audit reports, and evaluate suppliers.

Practice a 'Yes I Can' attitude.

Adhere to RHG's Business ethics.

HEALTH AND SAFETY

Ensure that all potential and real hazards are reported and reduced immediately.

Fully understand the hotel's fire, emergency, and bomb procedures.

Ensure that emergency procedures are practiced and enforced to provide for the security and safety of guests and employees.

Ensure that employees work in a safe manner that does not harm or injure self or others.

Stimulate and encourage a general awareness of health and safety in tasks and activities carried out within the department.

Follow hotel regulations and adhere to existing laws and regulations.

Anticipate possible and probable hazards and conditions and either correct them or take action to prevent them from happening.

Ensure that the highest standards of personal hygiene, dress, uniform, appearance, body language, and conduct are maintained by all employees in the department.

QUALIFICATIONS, EXPERIENCES & COMPETENCIES

Should be HACCP/Food Safety Level 3 trained.

Applicants should possess relevant educational qualifications.

Work experience of at least 3 years in a similar field is required.

Experience in inspecting food premises, writing reports, and filling checklists.

Specialized qualification in food safety and hygiene will be an advantage.

Should possess a track record of food safety and hygiene within the food industry.

Ability to liaise with all departments.

Should possess excellent communication skills.

Very good computer skills.
